SoLean Beef Patty Fajitas
1 Pkg. SoLean Beef Patties cut in ½ inch strips
1 medium onion cut into strips
1 green bell pepper cut in strips
1 sweet red pepper cut in strips
2 teaspoons canola oil
½ teaspoon each: chili powder, cumin and dried oregano
Heat oil in large skillet, add onions and peppers and stir. Add seasonings and SoLean Beef Patty strips. Stir and serve. Optional serving suggestion: serve family style with flour tortillas, salsa and nonfat sour cream.

SoLean Jambalaya
1 Pkg. SoLean Pork Patties cut into 1 inch squares
1 tablespoon canola oil
half cup diced onion
2 garlic cloves, minced
half cup diced green peppers
1-2 tablespoons blackened fish seasoning
1 cup parboiled rice
1 cup fresh okra, cut into ½ inch slices
10 ounce can beef gravy
16 ounce can diced tomatoes with juice
pinch cayenne pepper
In a large skillet with a lid, sauté the onion, garlic, peppers and okra with the oil. Stir in the tomatoes and gravy, the blackened fish seasoning and heat to boil. Add the SoLean and the rice. Reduce heat, cover and cook on low temperature for five minutes or until peppers are soft.
Blackened fish seasoning = pinch each: garlic powder, thyme, cayenne pepper, black pepper, paprika.
Serves 4. Each 1.5 cup serving: 243 calories, 8 g fat, 2 g saturated fat, 17 mg cholesterol, 855 mg sodium, 25 g carbohydrate, 3 g fiber, 5 g sugars, 16 g protein.

Tasty SoLean Omelet
1 Pkg. SoLean Pork Patties cut into 1 inch squares
2 tsp canola oil, divided
half cup diced green pepper
half cup diced red pepper
half cup chopped onion
half cup spinach leaves
12 oz. Egg Beaters* or 8 egg whites
Saute peppers, onions and spinach in 1 teaspoon of oil in large nonstick skillet until slightly soft, about 3 minutes; add SoLean; set this mixture aside. Add remaining oil to skillet and heat on medium. Pour in egg whites or Egg Beaters and scramble once. As eggs begin to firm, place SoLean mixture down the center. Cover and cook about 4 minutes or until egg is firm enough to fold onto filling. Cook to desired doneness. (Not more than 3-4 minutes). Optional, top with reduced fat shredded cheese and black pepper to taste.

Salisbury SoLean
1 Pkg. SoLean Beef Patties
1 cup sliced onion
2 teaspoons canola oil
1 cup brown gravy (1 package)
Black pepper to taste
Saute the onions in the oil. Stir in the brown gravy mixed according to package directions and bring to a boil. Season with black pepper. Heat SoLean Patties according to package directions and serve hot with sauce on top. Goes great with mashed or baked potatoes.

SoLean Beef Stir Fry
1 Pkg. SoLean Beef Patties cut in ½ inch strips
2 teaspoons canola oil
1 cup sliced onion
1 cup sliced carrots
1 cup sliced green and red bell pepper
1 cup pineapple chunks
4 tablespoons light soy sauce
1/2 cup prepared brown gravy (1/2 package)
Sauté the onions, carrots and peppers in the oil in a wok or large skillet until crisp/tender, about 3 or 4 minutes. Add the pineapple, soy sauce, prepared gravy and SoLean Beef Patty Strips. Heat through. Optional serving suggestion: Serve over rice.

SoLean Stroganoff
1 Pkg. SoLean Beef Patties cut into1 inch squares
2 teaspoons canola oil
1 cup chopped onion
2 cups sliced mushrooms
1 cup red wine (or can use beef broth)
1 cup prepared low fat cream of mushroom soup
1 cup nonfat sour cream
In a large skillet, sauté the onions in the oil. Add mushrooms and cook over medium heat 5 minutes. Add the red wine and cook until almost all is evaporated. Stir in the mushroom soup bring to a boil. Add the SoLean sour cream and heat thru. Serve over noodles or rice.

SoLean Beef Patty Gyros
1 Pkg. SoLean Beef Patties cut in ½ inch strips
3 cups shredded lettuce
6 pita or flat breads, warm
1 cup sliced onion
1 teaspoon olive oil
½ tsp. garlic powder
¼ tsp. cumin
¼ tsp. black pepper
Saute onion in olive oil in large nonstick skillet. Add seasonings and SoLean Beef Patty strips. Heat through and then remove from pan. Serve filling on pitas topped with shredded lettuce. Top with Tzatziki sauce. Serves four.
Tzatziki Sauce
1 cucumber, peeled, seeded and diced
1 cup plain yogurt
1 garlic clove, minced
Juice of 1 lemon
1 teaspoon dried dill
Salt and pepper to taste
Combine all ingredients in a bowl. Refrigerate until ready to serve. You can substitute nonfat sour cream for the yogurt.
